Real food. Real kitchens. Real days — including the hard ones.
Most food websites assume you're healthy, mobile, and have an hour to spare.
This one doesn't.
Grain Free ME is a grain-free cooking system built for people whose bodies already told them the food was part of the problem. No grains. No sugar. No fructose traps. No assumptions about what you have, what you can afford, or how many steps you've got left today.
If you're here, you probably already know something is wrong. You're in the right place.
THE PERSON BEHIND IT
One disabled guy in Fremont, Nebraska. Built on a stool.
I started cooking for myself at age 8 — not as a hobby, but because the food everyone else ate made me sick. No diagnosis yet. No words for it. Just a body that already knew.
Before the crash, I ran a full local food operation in King Lake — 60 hens, breeding rabbits, aquaponic gardens, greenhouses I built by hand, starting 2,500 seeds a year. In 2019 the flood took most of it. Six months later, complete ME/CFS collapse. I never recovered to baseline.
I cook from a stool now. I count steps. I build in crash day tiers because some days 2,600 steps is the whole budget.
Four years of testing, failure, and refinement later — this is what I built.
I'm not building recipes for healthy people. I'm building them for people like myself who are NOT healthy.
MEDICAL LIBRARY
49 pages. Free. Because you deserve the right framework before you ever buy anything.
The Grain Free ME Medical Library covers the conditions most likely to be sitting undiagnosed in your body right now — celiac, HFI, ME/CFS, MCAS, SIBO, Long COVID, and dozens more. Written in plain language. Grounded in PubMed, NIH, and CDC sources. Personal testimony throughout — never medical claims.
These aren't rare conditions. They are common conditions rarely diagnosed.
The library also includes a full section written for the people around you — partners, family, caregivers, doctors, and friends — because undiagnosed chronic illness causes damage on both sides of the table. The diagnosis doesn't just help you. It gives everyone the right framework.
RECIPE SYSTEM
Grain-free cooking built around the reality of a broken-battery day.
Every recipe in the Grain Free ME system comes in three tiers:
Crash Day Version — five ingredients or less, one pan, zero specialty tools. Built for the days when standing is the hard part.
Fixer's Version — better texture, better macros, modest equipment upgrade. For the days you've got a little more left.
Full Build — full Grain Free ME spec. Gram weights. Batch week. Vacuum sealed. Built to last.
One purchase. All three tiers. Because your capacity changes day to day and your recipe system should work with that — not against it.
No grains. No sugar. No pre-shredded cheese. No commercial bouillon. No tapioca starch. No shortcuts that cost you the next three days.
COMMUNITY & GUILD
You are not alone in this, even when it feels that way.
Grain Free ME is building something beyond a recipe website. A network of people who understand what it actually costs to eat safely when your body can't afford mistakes. Home cooks. Local producers. Gardeners. Caregivers. People who hold the standard without being asked twice.
The guild model is simple: small batches, known sources, trusted relationships, local transactions. No mass production. No corners cut. No ingredients you can't pronounce and can't verify.
If you want to cook, the recipes are here. If you want to produce locally, the apprenticeship framework is here. If you just need a quiet place to drop in on a hard night — that's coming too.
Commercial Licensing
The signage is coming. The standards come first.
If you've read the rest of this site, you already know what Grain Free ME is built on. Four years of testing. Personal stakes. A dietary system designed for people whose bodies cannot afford mistakes. A medical library covering 49 conditions written for the people who have been failed by every other answer they've been given.
That system has commercial potential. Food trucks. Restaurants. Catering operations. Meal prep and delivery services. Real kitchens serving real food to people who need it done right.
That future is being built deliberately. Not fast. Deliberately.
