Recipes

Every recipe here is grain free. Most are HFI safe. All of them are built for real kitchens, real budgets, and real days — including the hard ones. Recipes come in three versions: Crash Day for when the battery is low, Fixer's Version for when you've got a little more in the tank, and Full Build for when you're ready to run the whole system. You pick where you start. No judgment either way.

Every recipe here is grain free. Most are HFI safe. Some are not right for everyone. Read the notes on each recipe. Start slow. Track your own response. I'm not a doctor.

Bread & Buns

The thing most people miss most when they go grain free. These aren't substitutes that almost work — they're built from scratch to actually work. Sandwich buns, burger buns, dinner rolls. Real structure, real texture, real meals.

Tortillas & Wraps

Tacos, wraps, burritos, quesadillas — none of that has to disappear when you go grain free. These tortillas are built with a press, sealed in batches, and pulled from the freezer on the hard days. Flexible enough to fold, sturdy enough to hold.

Pizza

Real pizza. Not cauliflower. Not cloud bread. A grain free crust that holds toppings, crisps on the bottom, and doesn't fall apart when you pick it up. Built for the night when you just want pizza and don't want to explain yourself to anyone.

Breaded & Fried

Chicken nuggets, fried chicken, mozzarella sticks, fish — all of it possible without a single grain. Pork rind coating only. Beef tallow frying. Batch cooked on a good day, reheated in the air fryer on a crash day. This is the category that makes people stop arguing about grain free food.

Soups & Stews

One pot. One burner. Minimal cleanup. Maximum output. These recipes are built for the Instant Pot and the Dutch oven — set it, walk away, come back to a week of meals. The Crash Day Smoky Beef Chili alone is worth the price of admission.

Sides

The stuff that turns a protein into a meal. Mashed potatoes, freezer fries, crackers, salads, croquettes. Built to pair with whatever anchor protein came out of the freezer today. Some of these are Crash Day pulls in their own right.

Sauces & Seasonings

This is where the whole system gets its flavor. Dry spice blends vacuum sealed for two to three years. Wet condiments built from scratch because every commercial version fails the label check. Taco seasoning, ranch, chili blend, BBQ sauce, pizza sauce, gravy. The foundations that make everything else work.

Sweets & Treats

None of this kind of stuff is healthy. There is really no way to make it fully healthy. But if there is an honest grain free, HFI safe version worth building — it ends up here. No compromises on ingredients. No false claims. Just the occasional thing that tastes like a win without wrecking you

Noodles & Pasta

Coming soon. The hand crank pasta roller is in the kitchen. This is a better day project — grain free pasta development takes time to get right. When it's ready it goes here. Worth the wait.
